Jim:
The Ancestry test is autosomal. You will more than likely have matches in the USA, Canada, Australia etc rather than Ireland but if you do get an Irish match-- great! You will find that less than half the people you contact will respond back.
There are three civil parishes which have Carrickbeg as the RC parish-- Dysert, Fenoagh and Kilmoleran.
I looked at the 1901 census records for all Gormans in Waterford (126 in total) and I believe that your Gormans came from Curraghnagarraha townland in Fenoagh civil parish. I found a 70 year old ( I believe that age was significantly understated) Patrick Gorman a widower in Curraghnagarraha. He was not there in 1911 so likely died.
I went on the free site www.irishgenealogy.ie and found the 1903 death record for Patrick and the 1895 death record for his wife Mary. See below. The informants could be daughters but we don't know.
Mary Gorman 1895 death record see 9th record at link Catherine Brien was informant daughter?? https://civilrecords.irishgenealogy.ie/churchrecords/images/deaths_retu…;

If you can't find any more info from DNA matches, you may want to consider placing an article/letter in a Waterford paper.
