Roots Ireland has an index of records for each county. Go to Co. Kerry and then hit the Online Sources tab at the top and you will see the parish info. Three parishes: Lixnaw, Moyvane and Tralee do not have baptismal records.
irishgenealogy.ie does not have an index of records. Go to the main page and hit Church records, Co. Kerry, add Sullivan baptisms as you search request. Then hit search. On the left hand side, hit the link for Kerry RC records and you should get a complete list of of Kerry parishes. One item of interest is that some RC parishes in West Co. Cork are in the Diocese of Kerry and would be included in your search request for Kerry.

I have a copy of the IrishGenealogy RC registers source list for Kerry - if you have particular parishes of interest I can check dates.
IrishGenealogy include baptisms in their source list for the three parishes that Roger mentioned which are not currently covered by RootsIreland transcripts :
Lixnaw 1800-1901
Moyvane 1800-1900
Tralee 1772-1900
Another source worth checking is the (free) NLI RC Registers site, they list dates covered and may mention gaps.
If you have a parish and approximate time frame it's worth browsing these images, as the transcripts sometimes miss difficult to read entries or portions of damaged pages. These microfilms (over 1,000 parishes all over Ireland) have been indexed and can be searched either on Ancestry or using a free account on FindMyPast.
Watch out for differences in parish names - RootsIreland sometimes uses alternate names, or name of a chapel within a parish.
Added - for ref the NLI films (FMP/Anc) cover baptisms for these three parishes for the following dates :
Lixnaw 1810-1881 (with gaps)
Moyvane 1855-1877
Tralee 1772-1874 (with gaps)
Thanks - that is very helpful. I knew about how to check availability on NLI Catholic website so just one last question - does irishgenealogy or rootsireland have records that aren't included on NLI? Thanks again, much appreciated!
Unfortunately without knowing a parish or at least an approximate area it would be a time consuming task to work out the overlap and gaps between the systems for the whole county due to the alternate parish names and different level of detail in the source document.lists - there were about 75 parishes. The first image below is from the old printed list provided by the NLI for the RC Diocese of Kerry, note the detailed dates and references to alternate names.
The second image is from RootsIreland, and then from the IrishGenealogy list.
Kerry records are a later addition to RootsIreland they are still adding details, if I remember correctly there was an email from them over the summer about Kerry updates to their system. In other areas they definitely have transcript for parishes not covered by NLI and sometimes dates not covered by other systems, and also records for many counties not covered by the church records on IrishGenealogy , but in the case of Kerry it looks like the reverse may be true - e.g. see the three examples Roger mentioned.
I've attached a copy of the IrishGen Kerry RC list for reference..

In general, NLI records end around 1880. They were filmed in the 1950s/1960s. Roots Ireland records end around 1900 (see Shane’s picture of the index above).

Thanks so much! I faded away from my Irish genealogy in October so missed some of these!
